Simple Granola

I just love my breakfast, always have, it’s one meal I never ever skip. I love to vary my breakfasts too so in any week I could have poached eggs, bacon & mushrooms (usually after my morning swim), scrambled eggs (with spinach or smoked salmon), porridge with fruit. At the weekend though I look forward to something even tastier. If I happen to have a ripe avocado I will have smashed avocado on sourdough toast with a poached egg and / or chorizo or a real treat for me is this delicious granola with Greek yogurt and fruit. It is so easy to make (you don’t need any cooking skills whatsoever) – basically toss all the dry ingredients (nuts, seeds & desiccated coconut) with olive oil and honey and bake in the oven for 20/30 minutes. I have yet to find a granola that you can buy that is better than this, most shop-bought ones all have too much sugar in them and/or very few nuts. Be warned, leaving it to cool can be dangerous – certainly in my house a good portion of it disappears then!

As for the plums in the photo these are just halved, stoned, couple of tablespoons of water sprinkled on them, a drizzle of honey and baked in the oven for 30/40 minutes. These were plums that were looking a bit sad in the fruit bowl and were probably going to end up in the bin. They lasted a week in the fridge (well hidden!),

The recipe is adapted from one of Jamie Olivers in his book “Ministry of Food” and don’t fret too much about the quantities – I just use whatever nuts & seeds I have at the time.

Servings / Quantity: The recipe will fill a large kilner type jar.

Time: 35/40 minutes (5 mins prep and approx. 30 mins in the oven)
Ingredients

200g (7oz) rolled oats (porridge)
150g (5½oz) mixed nuts (hazelnuts, almonds, walnuts, brazil nuts) roughly chopped
50g (2oz)mixed seeds (sunflower, pumpkin, sesame)
50g (2oz)desiccated coconut
1 teaspoon ground cinnamon
150g (5½oz) dried fruit (raisins & cranberries)
5 tablespoons of runny honey
5 tablespoons of olive oil

Method

  • Preheat the oven to 180°C/350°F/Gas 4
  • Put all the dry ingredients into a large bowl and mix well
  • Drizzle with the olive oil and then with the honey (if you do it in that order the honey slips off the spoon easily)
  • Stir and mix well again
  • Put the mixture onto a baking tray or roasting tin and smooth it out evenly in the tray
  • Bake in the preheated oven for 25-30 minutes
  • IMPORTANT – check it every 10 minutes and give it a stir as it may burn around the edges.
  • When the granola is nice and golden brown remove from the oven and stir in the dried fruit.
  • Serve with natural / Greek yoghurt and your choice of fruit.

  1. I’d use agave nectar instead of the honey in the granola, but it sounds lovely and I wish I had some right now to cheer me on this cold Tuesday morning!

    • Hi Liz, yes agave would work just as well, I might try that next time, don’t think you need as much because it is a bit sweeter than honey so perhaps 2 ½ tablespoons of agave would be enough for this recipe. I will save you some when I make it next!
